Broa de Avintes

Hoje una receita primeiro em Português pois é uma guloseima e um dos pães tradicionais de Portugal. Logo a seguir um resumo em espanhol. A Broa de Avintes é um pão que como seu nome indica é  feito em Avintes (Vila Nova de Gaia) no norte de Portugal, também conhecido como Boroa de Avintes. Devido a sua composição é um pão que pode ser utilizado em diversos comeres, a acompanhar sardinhas asadas por exemplo ou com bacalhau de qualquer maneira cozinhado... uma delícia.

 

A Broa de Avintes é um pão com formato de uma torre sineira feito com diversas farinhas (milho amarelo e branco, centeio e malte) e pelo centeio tem uma cor castanho escura e um sabor agridoce. Meus caros leitões vão gostar

 

Material (receita original e modificações)

Como as quantidades da receita original eram excessivas para fazer em casa só usei uma quinta parte dos ingredientes.

 

Farinha de Milho Branca – 1,25kg  (no seu  lugar 250 gr)

Farinha de Milho Amarela – 1,25kg (no seu  lugar 250 gr)

Farinha de Centeio – 2,5kg  (no seu  lugar 500 gr)

Farinha de Malte – 100gr  (no seu  lugar farinha de aveia 20 gr é difícil arranjar por cá – Catalunya- farinha de malte assim q fiz esta substituição)

Água – 2500ml  (no seu  lugar 500 ml)

Levedura – 50gr (no seu  lugar 10 gr)

Sal – Pitada

 

Métodos

 

Aquecer a água a uns 45ºC com um pouquinho de sal (duas pitadas), depois vamos a amassar as farinhas com essa água, (a receita original sugeria cortar um pouco da água (até 50%) para criar uma massa mais dura mas com 500 ml para as proporções de farinha indicadas a massa não acaba de ligar e ficam grumos, assim que tive de adicionar um pouco mais de água (até os 650 ml) para obter uma massa que ficasse homogenia.


No fim de bem amassada adicionamos a levedura (como era fresca, com um pouquinho de água para a dissolver) e amassamos mais um pouco, depois deixámo-la repousar uns 30 minutos para a massa levedar um pouco (tapamos a massa com um pano no bole) 




Pronto! Já agora partilhamos a massa em pedaços de 600 gramas, enrolamos, amassamos e estendemos a massa mais um pouco com ajuda de bastante farinha de aveia (centeio na original, mas como gastei toda a que tinha ao fazer a massa...), 




depois arrumamos as broas num tabuleiro de levar ao forno forradas com papel de alumínio (folhas de couve galega na tradição culinária e na receita original, mas como... quem dá com folhas de couve galega na Catalunya? Assim q para conservar a humidade do pão embrulhei com o papel de alumínio.




Levamos a seguir ao forno pré-aquecido a 260ºC, e deixamos cozinhar por volta de 1 hora (lembrai q cada forno é cada forno e os tempos podem variar e também se o tamanho de broa é maior, tb mais tempo vai demorar). Uma vez temos a broa já cozida, guardamo-las debaixo de um pano para ficarem bem abafadas até arrefecer.

La Broa de Avintes es un pan que como su nombre indica se elabora en Avintes (Vila Nova de Gaia) en el norte de Portugal, también conocido como Boroa de Avintes. Por su composición, es un pan que se puede utilizar en diferentes comidas, para acompañar sardinas al grill por ejemplo o con bacalao de cualquier forma cocinado ... una delicia.


Este pan de forma acampanada se elabora con varias harinas (maíz amarillo y blanco, centeno y malta). El centeno le da un color marrón oscuro y un sabor agridulce. 

 

Material (receta original y modificaciones)

Como las cantidades de la receta original eran excesivas para hacer en casa, solo usé una quinta parte de los ingredientes.

 

Harina de Maíz Blanco - 1,25 kg (250 gr en su lugar)

Harina de maíz amarillo - 1,25 kg (en su lugar 250 gr)

Harina de centeno - 2,5 kg (en su lugar 500 gr)

Harina de malta - 100gr (en su lugar de avena 20 gr)

Agua - 2500 ml (500 ml en su lugar)

Levadura - 50gr (en su lugar 10gr)

Sal - pizca

 

Métodos

 

Calentar el agua a unos 45ºC con un poco de sal (dos pizcas), luego amasamos las harinas con esta agua, (la receta original sugería cortar un poco de agua (hasta un 50%) para crear una pasta más dura pero con 500 ml para las proporciones de harina indicadas la masa no se liga y quedan grumos, así que tuve que añadir un poco más de agua (hasta 650 ml) para obtener una masa que fuera homogénea.

Una vez bien bien amasadas las harinas añadimos la levadura (como estaba fresca, puse previamente un poco de agua para disolverla) y amasamos un poco más, luego dejamos reposar unos 30 minutos para que la masa suba un poco (tapamos la masa con un paño en el cubriendo el bol donde la dejamos reposar)

Pasada la media hora distribuimos la masa en trozos de 500-600 gramos, enrollamos, amamos y enrollamos un poco más la masa con la ayuda de mucha harina de avena (centeno en el original, pero como me gasté toda la que tenía al hacer la masa ...), a seguir colocamos el pan en una bandeja de horno forrado con papel de aluminio (hojas de col gallega en la tradición culinaria y en la receta original, pero  ¿quién encuentra hojas de col gallega en Catalunya?  Así para conservar la humedad del pan lo envolví con papel de aluminio.

Luego llevamos la masa al horno precalentado a 260ºC, y dejamos cocinar 1 hora aproximadamente (recordad queridos lechones que cada horno es cada horno y los tiempos pueden variar y además si el tamaño del pan es mayor, tardará más). Una vez cocido el pan lo guardamos bajo un paño para mantenerlo bien arropado hasta que se enfríe.

Toru KAMEI Sensei’s Kendo Lecture: How To Strengthen The Left Leg


The first method is to move the right foot out pressuring the opponent then, from that position, strike.

The next method is to move the right foot out pressuring the opponent and then, with the intention of luring the opponent in, pull the right foot back to the original position and then strike.

The third method is to move the right foot out and pressure the opponent. While pressuring the opponent move the left foot up so that you can return to your original kamae position and then strike from there.

These are the three types of ashi no seme that I pay attention to during my keiko. Whether this is “correct” or not I don’t know, but I feel that I have consistent success with these methods.

If you find these methods in anyway useful and if you try them at least once during your own keiko then I’ll be very happy.

Let’s look again at the three ashi no seme methods we discussed before. For illustration purposes I’ll slightly exaggerate the examples.

From your kamae step out but don’t stop there, obviously you should attack immediately. If you break it down into steps your body will sink but in that instant you should already be striking forwards. Anyway, first of all step out and seme with your right foot.

In the second method we first step out with the right foot then pull it back. This will either cause your opponent to strike or step in, either due to his own volition or because you have lured them to. At that point strike.

In the last method we move the right foot out and immediately bring in the left foot so that we are back in our basic kamae and strike.

These are the three methods of using the right foot/leg that I currently use during my keiko at the moment. Up until now we have only discussed strikes from the omote side (left side of the shinai), but this time we will look at strikes from the ura side (right side).

Move your kensen around and under the opponent’s shinai so that the shinai are touching on the ura side. It doesn’t matter if you move your right foot or not, but what you must not do is pull the shinai towards yourself. From this position strike. I’d like you also to try this out.

Another one is in the instant the opponent starts to move to execute a men strike press their shinai down and strike them.

There are other examples of seme methods that I am practicing at the moment.

If you approach keiko with this feeling (using these methods), you will not lose to your opponent’s seme and your seme may force the opponent to move back.

At least, these are some of the benefits I feel that are to be gained through these type of methods. Please try them by yourself.

As mentioned before I said that we should not pull the left foot up when striking. This has been one thing I’ve constantly worked on since I was a child.

OK, so how do we go about not doing this? Of course, this should be done through repeated practice of suriashi, fumikomi, that is, the basics.

However, if you have developed a bad habit of pulling your left foot up when striking, how do we get rid of it?

The first thing is that if we are holding a shinai and facing an opponent we often forget to be conscious about working on the bad habit and it just gets worse.

My idea therefore we should first practice by ourselves without a shinai. Let me explain my method.

If you hold shinai and face an opponent you end up wanting to strike them, and your footwork may be compromised.

Therefore you should practice by yourself and kamae using only your hands. From there practice striking men or kote-men from your kamae without moving your left leg up.

By practicing striking, body movement, and footwork without a target (i.e., an opponent) you will be able to more easily acquire correct movement.

Point: You will be able to acquire good form in both body movement and footwork if you practice striking without holding a shinai. It will also allow you to pay attention to not pulling up your left leg while striking.

It is important that you should do this repeatedly many times.

Whilst doing this you must always be careful not to pull the left foot up when striking. As a kendo practice method I’m not sure if what I just introduced is orthodox or not but I do feel that if you do it whilst paying attention to your left foot and body posture there is benefit to it.

The next step is to do the same practice whilst holding a shinai.

The execution is the same: do it without an opponent, and strike forward in range that it is comfortable for you.

The point is the same as before: don’t pull your left foot up when striking, move directly from your kamae. Just like this.

By practicing in this way repeatedly you will acquire good body movement. Please try this first without a shinai, then with a shinai. By practicing by yourself like this you will see a good result.

You might feel a little bit lonely practicing by yourself so you could try practicing using a mirror.

Even if you practice by yourself, remember and imagine that you are facing an opponent of about the same height and never divert your gaze, and pay attention to your spine and coccyx.

By paying attention to good body posture and not pulling up the left leg I feel that this method has a lot of benefit. Please try it.

I’ve talking about not pulling up your left foot during striking.

I think this is the most basic of the basic elements of kendo to master.

Why?

Well for example by pulling up your left foot you are telegraphing your intention to the opponent “I’m going to strike you now”, which we must of course lose.

So how do we do this exactly?

Previously I worked as a kendo teacher in a police academy and there I taught people who began kendo as adults.

Now I’ll show you what I taught them.

First, at the same time as lifting the shinai up raise the right foot and put your weight on your left foot. Strike from that position.

I had the adult students repeat this action again and again.

In the beginning they did it without holding a shinai in their hands. Lift up and strike. Lift up and strike. They did this again and again.

After this we moved onto suriashi.

The next step was to do the same thing whilst holding a shinai. Something you should be careful of at this time is to be careful not to show the bottom of your foot when you lift it up.

There are lots of points to make, but in the meantime just concentrate on lifting up the foot and shinai at the same time and striking from that position. Like before, there is no partner with you so you don’t have to jump forward so much. Because of this I think that this action is easy to master. Please give it a try.

Ok, so I talked about the left foot. Next I’m going to discuss about a method of not breaking body posture whilst wearing bogu and facing partner.

First, enter close to your partner, so close that you could strike them using only your hands. From here, strike like this. Keep this form. Naturally, when you strike pull up your left foot on the strike.

From a close distance strike. Whilst doing this you can pull up your left foot or just leave it in place, that’s up to you. Next, move back 20 cm and strike men. Like this.

The third step is to move back to issoku-itto-no-maai and strike. If you practice like this then finally you will be able to strike without breaking your posture or form and without pulling your left foot up before striking.

I think it is good if you break it into three steps, close distance, middle stance, striking distance, and practice this way.

Point: Practice striking men in three different steps, gradually increasing the distance.

In each of the three steps pay attention to keeping your body posture.

Toni Tipton-Martin's Pork Chops in Lemon-Caper Sauce

 Chuletas de cerdo en salsa de limón y alcaparras del Chef Toni Tipton-Martin

Esta es una receta extraída del "Jubilee: Recipes From Two Centuries of African American Cooking" de Toni Tipton-Martin (2019). Es un remix de una receta que el chef Nathaniel Burton recopiló en su obra de 1978, "Creole Feast: Fifteen Master Chefs of New Orleans Reveal Their Secrets", a la cual Tipton-Martin incorporó ralladura de limón, jugo y mantequilla extra. Es un plato de chuletas de cerdo ahogadas convertido en algo glorioso y elegante. “La historia alimentaria de los negros en Estados Unidos ha sido una historia de comida de la supervivencia”, dijo Toni Tipton-Martin en una entrevista. Pero la verdad es que este plato es brutal!

MATERIAL

4 chuletas de cerdo con hueso 

Sal y pimienta negra recién molida, al gusto

½ cucharadita de hojas secas de tomillo

2 cucharadas de aceite de oliva

4 cucharadas de mantequilla sin sal

1 chalota muy pequeña, picada (aproximadamente 1 cucharada)

2 dientes de ajo, picados (aproximadamente 1 cucharadita)

2 cucharaditas de harina

1 taza de vino blanco seco

1 ½ tazas de caldo de pollo

2 cucharadas de alcaparras escurridas

2 cucharadas de perejil fresco picado, y más para decorar

1 cucharadita de ralladura de limón recién rallada, más 2 cucharadas de jugo


MÉTODOS

1.- Secamos las chuletas con papel de cocina y sazonamos generosamente con sal, pimienta y tomillo. 

2.- Vertimos el aceite de oliva en una sartén grande y caliente a fuego medio hasta que el aceite comience a brillar. 

3.- Agregamos las chuletas y cocinamos hasta que estén bien doradas por cada lado y bien cocidas, aproximadamente 5 minutos por cada lado. Ha seguir transferimos las chuletas a un plato y las cubrimos para mantenerlas calientes.



6.- Escurrimos la grasa de la sartén, y pasamos papel de cocina para eliminar restos (ojo con no quemarse!) luego derretimos 2 cucharadas de mantequilla a fuego medio hasta que chisporrotee. 

7.- En este punto, agregamos la chalota y el ajo, y sofríe hasta que los aromáticos se ablanden, reduciendo el fuego si es necesario, aproximadamente 1 minuto. 

(Como en casa no gusta ni la cebolla ni cosas semejantes, pasé la cebolla de Figueras que utilicé en lugar de la chalota, por el rallador para no dejar rastro del delito)

8.- A seguir, espolvoreamos con la harina y seguimos cocinando, revolviendo el potaje, durante 2 minutos. Añadimos el vino y el caldo de pollo y subimos el fuego a alto para llevar el líquido a ebullición.

9.- Reducimos la intensidad del fuego a medio-alto y cocinamos, sin tapar, hasta que el líquido se reduzca aproximadamente a la mitad (nos llevará entre 7 y 10 minutos).

10.- Incorporamos las alcaparras, el perejil, la ralladura de limón y el jugo de éste y la salsa picante al gusto (usé tabasco generosamente pues me gusta el picante)

11.- Cocinamos ahora a fuego lento durante 1 a 2 minutos. 

12.- Agregamos las 2 cucharadas restantes de mantequilla hasta que se derrita y la salsa se vea suave. En este punto incorporamos las chuletas de cerdo en la salsa y las dejamos calentar durante un par de minutos y ya las tenemos listas para servir vertiendo salsa sobre cada chuleta de cerdo al gusto. Podemos acabar adornando el plato con un poco de perejil fresco.

The Basic Of Seme by Toru Kamei II: Ki no seme and Kensen no seme

 I think there are many types of seme that you know. In particular what I pay attention to during keiko is “ki no seme” (spiritual pressure), “kensen no seme” (pressure of the shinai tip), and “ashi no seme” (pressure via footwork). “ki no seme” is expressed through the confidence you have when facing your opponent,



Point: Pay attention to three types of seme: spiritual, shinai tip, and footwork.

And one manner to express this is through your kamae, which we discussed before. You must develop your own kamae, one that you have self-confidence in.

This confidence – that you can execute and deliver correct techniques from your kamae – will be able to be felt by your opponent. This is the first important point. Accordingly, spiritual pressure will naturally occur. In other words, it’s important to have confidence in your kamae.

Point: Ki no seme comes out of acquiring a correct kamae and having confidence that you can strike from it.

Another important point is, of course, that you should think of the shinai as a sword. To express power through your kensen is vital. To express this you should lower your kensen as much as you can in order to pressure your opponent.

Point: Kensen no seme is achieved through lowering your shinai tip and pressuring your opponent through the power expressed in the tip.

As an action you could just move the kensen down or you could, for example, push down on the opponent’s shinai from above, etc., the point being that you should keep in mind the need to express power through your kensen at all times during keiko. This is the second point.

The third point is that you should pressure your opponent from your lower body, not just your upper body. This is seme from your leg/foot, your knee, from the tips of your toes, that is, seme from your right leg. I believe this is very important. However, it’s important that when you seme in this manner that it leads to a strike of some sort.

Point: Kensen no seme is achieved through lowering your shinai tip and pressuring your opponent through the power expressed in the tip.

You shouldn’t just move your right foot out and stop, as not only may your posture be compromised but it may lead to your opponent pressuring you instead. You must always keep this in mind.

So it seems that we have come back to the start: the importance of acquiring and having confidence in your own kamae is key in being able to seme. Please keep this in mind.

The Basic Of Seme by Toru Kamei

 


What I would like to do today is use the basic idea of a correct kamae that everyone knowns as a base and add to that my ideas about how you can improve your kendo.

The very first thing to think about is your gaze. Never divert your gaze.

Point: Don’t divert your gaze from your opponent.

Within kendo there are many teachings regarding how to look at your opponent, for example “Enzan no metsuke” (to look at a distant mountain) which says that you should look at the entirety of your opponent. However, if you approach looking at your opponent in such a vague manner your gaze can become easily diverted. So what I do in my keiko is look directly at my opponents eyes and never divert my eyes from them.

Why do I do this?

Well, depending on where you are looking at your hands may move up, and this may cause your kensen’s pressure (seme) to disappear. This is why I say the first important point to think about in kendo is to never divert your gaze from the opponent’s eyes.

The next point regarding kamae I wish to make is that you should lower your kensen as much as you can in order to pressure your opponent.

Point: When in kamae, lower your kensen and push your hands out a little bit in front of your body.

Another point is to push your hands out a little bit in front of your body and move them (and the shinai) in front of your body.

Yet another point is to never break your body posture.

What should we pay attention to in order not to do this?

Well, the first thing is the point about never diverting your gaze we mentioned before.

Secondly, you should pay attention to your spine and your coccyx.

Point: Paying attention to your spine and coccyx, straighten your back.

Depending on how consciously you approach this your body posture will not break.

You should always pay attention to this when you move.

Another point is your legs.

The foundation of everything is of course your legs, especially your left leg.

I personally think that the biggest problem in kendo today is bad footwork.

Basic kendo states that should move with the front foot. Basic kendo states that should move with the front foot. However, nowadays I see a lot of kendoka, children and adults, bring up the left foot first then strike. What you should do is strike without bringing your left foot first up.

Point: From your kamae strike without pulling your left foot first.

You should kamae in such a way that you can strike at any point, even if you are moving. This is what I pay attention to in my kendo.

If you tense up your shoulders like this then your hands will also tense up and you will be unable to put power into the monouchi (striking) section of your shinai. Therefore, relax your shoulders.

Point: Grip the shinai firmly and relax your shoulders.

You can do this by moving your shoulder blades back and dropping them. However, you shouldn’t relax your grip, rather grip the shinai firmly to a certain extent. When in kamae try to imagine relaxing from your shoulders down to your elbows.

I hope that this has been useful to everyone, and I hope you try the points mentioned here at least once.

Point: Don’t divert your gaze from your opponent. Lower your kensen.

Pay attention to your spine down to your coccyx and straighten your back.

If you move your shoulder blades a little bit back and down then you will be able to relax your shoulders.

A Priest, a Minister & a Rabi


A Catholic Priest, a Baptist Preacher, and a Rabbi all served as chaplains to the students of Northern Michigan University in Marquette. They would get together two or three times a week for coffee and to talk shop.

One day, someone made the comment that preaching to people isn't really all that hard - a real challenge would be to preach to a bear. One thing led to another, and they decided to do an experiment. 

They would all go out into the woods, find a bear, preach to it, and attempt to convert it. Seven days later, they all came together to discuss their experience.

Father Flannery, who had his arm in a sling, was on crutches, and had various bandages on his body and limbs, went first. 'Well,' he said, 'I went into the woods to find me a bear. And when I found him, I began to read to him from the Catechism. Well, that bear wanted nothing to do with me and began to slap me around. So I quickly grabbed my holy water, sprinkled him and, Holy Mary Mother of God, he became as gentle as a lamb. The Bishop is coming out next week to give him first communion and confirmation.'

Reverend Bill y Bob spoke next. He was in a wheelchair, had one arm and both legs in casts, and had an IV drip. In his best fire-and- brimstone oratory, he claimed, 'WELL, brothers, you KNOW that we don't sprinkle! I went out and I FOUND me a bear. And then I began to read to my bear from God's HOLY WORD! But that bear wanted nothing to do with me. So I took HOLD of him and we began to wrestle. We wrestled down one hill, UP another and DOWN another until we came to a creek. So I quickly DUNKED him and BAPTIZED his hairy soul. And just like you said, he became as gentle as a lamb. We spent the rest of the day praising Jesus. Hallelujah!

The priest and the reverend both looked down at the Rabbi, who was lying in a hospital bed. He was in a body cast and traction with IVs and monitors running in and out of him. He was in really bad shape. 

The Rabbi looked up and said: "Looking back on it, circumcision may not have been the best way to start."

Gnoquis crujientes con coles de Bruselas


Lechones, otra receta para triunfar con una comida de fácil elaboración. Tendréis a punto una comida fantástica en 20 minutos, fruto de una mezcla explosiva de ñoquis braseados, coles de Bruselas salteadas con ralladura de limón, hojuelas de pimiento rojo y mantequilla. La clave de esta receta está en cómo cocinar los ñoquis comprados en el super (los finos en tiendas gourmet pero ojo q los frescos no son recomendables). Para preparar estos ñoquis no hace falta hervirlos. Simplemente los doramos en la sartén hasta que estén crujientes y dorados por fuera, y su interior se mantendrá masticable. La textura resultante recuerda a la masa frita. Los ñoquis congelados también funcionarán aquí, pero los que se almacenan en nevera se vuelven crujientes un poco mejor.

 

Material

450gr de coles de Bruselas (como alternativa a los q les desagradan estas crucíferas podéis usar otras tales como el brócoli, coliflor o incluso repollo pero mi consejo es q os atreváis con las coles de Bruselas )

1 limón

Entre ½ y ¼ de taza de aceite de oliva extra virgen

 Sal y pimienta negra

½ cucharadita de hojuelas de pimiento de cayena (yo usé dos pimientos de cayena enteros -longitud aproximada 7 cm - me gusta el picante q le vamos a hacer)

1 paquete (aprox ½ kilo) de ñoquis de patata refrigerados o de nevera (mejor evitar los frescos del día)

6 cucharadas (aprox 120-160 gr) de mantequilla sin sal, cortada en 6 piezas

½ cucharadita de miel (3 ml)(Como alternativa utilicé jarabe de agave y quedaron estupendos) 

Parmesano recién rallado, para servir



Métodos

1.- Cortamos la base de las coles de Bruselas y a seguir las partimos por la mitad.




2.- Con un pelador de verduras, pelamos el limón en tiras gruesas y luego las cortamos primero longitudinalmente y luego a cuadrados. (Obtendremos aproximadamente 1 cucharadas de picada de piel de limón). Hacemos lo propio con los pimientos de Cayena. Los abrimos por la mitad, quitamos las semillas y cortamos longitudinalmente los pimientos primero en bastones y luego en cuadraditos.


3.- En una sartén grande (idealmente de un diámetro entre 30 y 40 cm), calentamos 3-4 cucharadas de aceite de oliva a fuego medio-alto. Agregamos las coles de Bruselas, sazonamos con 1/2 cucharadita de sal y un poco de pimienta molida, a seguir colocamos las coles de Bruselas en una capa uniforme, con el lado cortado hacia abajo.

4.- Esparcimos la ralladura de limón por encima y dejamos que las coles se cocinen sin molestarlas para nada hasta que estén bien doradas por debajo. Esta operación nos llevará entre 3 y 5 minutos y nos aromatizará la comida y la cocina. 


5.- A seguir agregamos las láminas de cayena, removemos y cocinamos hasta que las coles de Bruselas estén tiernas y crujientes (esto nos llevará de 2 a 3 minutos no más en función de la temperatura -yo puse la vitro a 6.). A seguir, transferimos a un tazón mediano y reservamos.

6.- En la misma sartén, calentamos 1-2 cucharadas de aceite de oliva a fuego medio-alto (de nuevo mantuve la vitro a 6.). Separamos los ñoquis que estén pegados y los agregamos a la sartén. Dejamos que se cocinen con la sartén tapada y ni los miramos hasta que hayan pasado unos 3 minutos (en función de la temperatura de la vitro puede ser más menos un minuto). En este punto ya estarán dorados por un lado. 

7.- Agregamos la mantequilla y la miel (en mi caso jarabe de agave), sazonamos con sal y esparcimos una cantidad generosa de pimienta negra y ahora sí, vamos cocinando removiendo los gnoquis hasta que la mantequilla se haya derretido, los gnoquis/ñoquis dorados, la salsa espumosa y la cocina con olor a nuez (esto es pura poesía fratelli). Poco tiempo nos llevará a lo más 3 minutos, pero lo normal es que con dos ya lo tengáis. 


8.- Ya solo nos falta añadir las coles de Bruselas de nuevo a la sartén para que estén bien calientes cuando las llevemos a la mesa. 


9.- Espolvorear con parmesano rallado y servir.

 

Disfrutaréis de la combinación de sabores, la frescura del limón, el picante de la Cayena, el gnoqui con regusto a mantequilla y miel,… paro porque la saliva me inunda el teclado…

 

A triunfar lechones!

Salmón asado glaseado con azúcar morena y salsa teriyaki

Lechones, estamos en la semana del salmón. Tras la receta del salmón USA Style hoy otra aún más fácil para cocinar este suculento pescado. Palabrita del Niño Jesús, en menos de 10 minutos estaréis sentados a la mesa disfrutando de este delicioso y razonablemente saludable plato. Siempre es interesante estudiar y practicar con recetas de este pez ya que a parte de suministro de proteínas nos proporciona también ácidos Omega3 útiles para contrarrestar a esos pequeños anarquistas del organismo que conocemos como los radicales libres, además reduce el colesterol y con ello los riesgos de enfermedades cardiovasculares, entre otras muchas virtudes. Si sois amantes del salmón esta receta de salmón glaseado con azúcar moreno y salsa teriyaki os hará disfrutar de los sentidos y si no lo sois es una ocasión para empezar a amar este pescado, especialmente por el poco esfuerzo que representa cocinarlo.


Material
Aerosol para cocinar

(Alternativauna cucharada de aceite de oliva

3 cucharadas de azúcar morena

1 cucharada de jengibre fresco pelado y rallado

1 cucharada de mostaza Dijon

2 cucharadas de salsa Teriyaki (para sazonar)

Cuatro filetes de salmón 

(usé dos supremas partidas por la mitad)


Métodos

1. Precalentamos el horno con el grill a 300º (o a ¾ de potencia) los 10 minutos previos q dura la preparación del plato

2. Mientras se va calentando el horno preparamos el glaseado: mezclamos el azúcar moreno, el jengibre, la mostaza y la salsa Teriyaki en un tazón pequeño.  Empezamos por la salsa obviamente y seguimos con el resto de elementos uno a uno y removiendo hasta obtener la salsa fluida. Si vemos que queda densa en exceso podemos corregir incorporando más salsa Teriyaki.



3. Cubrimos con papel aluminio una fuente para hornear de tamaño necesario para que se puedan acomodar los filetes de salmón holgadamente y a seguir embadurnamos un paño o papel de cocina con aceite y fregamos con él el papel de aluminio o bien si disponemos de un aerosol de aceite entonces és aún mucho más sencillo, rociamos la superficie del papel de aluminio con él y listos. Así evitamos que se pegue el salmón a la lámina de aluminio.

4.  Colocamos el salmón en la fuente para hornear con la piel en la parte inferior y lo cubrimos con cucharadas del glaseado sobre la parte superior de cada filete.



5. Horneamos a 170-190°C hasta que el salmón glaseado este ligeramente dorado y apenas opaco del centro, esto nos llevará unos 15 minutos (yo suelo poner el horno entre 170 y 180ºC pues me gusta que quede poco hecho). Y están listos para servirse.




Tips & tricks

Para rallar el jengibre es mejor guardarlo en el congelador y cuando está petrificado pasarlo por el rallador, así no se os deshilachará


El mejor corte para hacer este plato son las supremas de la parte central hacia la cabeza del salmón 


Idealmente las supremas han de tener un grosor de entre 3-4 cm en la parte más ancha y 2 cm en la más estrecha


Suelo cortar las supremas por la mitad pues ayuda a montar el plato una vez cocinado pero este paso no es imprescindible


Importante, no se debe voltear el salmón mientras lo horneamos o una vez lo servimos

Salmon USA Style

Hoy otra receta fácil de la cocina del Kendolechón. Un salmón made in USA pillado del New York Times, periódico donde a la par de noticias ofrecen recetas golosas (y untosas). Otra receta fácil que os hará triunfar en la cocina. Gustará hasta a los que no les gusta el pescado. Pero como decía Takaeshi,... Al turrón!


Material:


2 filetes de salmón de 150-170 gramos, i(mejor salvaje pero algunos "ecológicos" tampoco están mal, de 2 a 3 cm de grosor

Sal (kosher en el original pero yo ante la falta de una sal hebraica usé sal del Himalaya, Yahvé me perdone)

Pimienta negra molida

2 cucharadas de aceite neutro, como semilla de uva o girasol

2 cucharadas de mantequilla sin sal

1 chile jalapeño mediano, sin semillas y cortado en cubitos finos, aproximadamente 2 cucharadas (o al gusto)

2 cucharadas de una mezcla de albahaca picada, menta y perejil (el original sugería usar cilantro o menta o perejil pero yo valiente los mezcle en magnífica alquimia)

Métodos:


1.- Secamos los filetes de salmón con una toalla absorbente de papel de cocina y los sazonamos por ambos lados con sal y pimienta (o sea lo que viene a ser salpimentar)

2.- Calentamos una sartén lo suficientemente grande o una plancha de cocina a fuego alto. 

3.- Cuando la sartén empieza a estar caliente agregamos el aceite y lo vamos distribuyendo por la plancha girándola repetidamente y cuando el aceite empieza a brillar, depositamos los filetes en la sartén, con la carne hacia abajo, dejamos que se doren durante aproximadamente un minuto, ( nos sirve de guía observar que el salmón empieza a tomar algo de color y se despega fácilmente de la plancha).Yo utilicé una espátula para voltear los filetes sobre el lado de la piel

5.-  A seguir toca bajar el fuego a medio y dejar tranquilo el salmón mientras chisporrotea y empiezan a caramelizarse los bordes inferiores, aproximadamente de 2 a 3 minutos es el tiempo que nos llevará en función de la temperatura de la plancha. (Aproveché este tiempo para prepararme unos pimientos del piquillo para que sirvieran posteriormente de guarnición)

6.- Si sois gente de nervio, que es el caso, podéis hacer como yo que con una espátula fui presionando los filetes durante los primeros 15 segundos después de girar las piezas del salmón para evitar que l piel se encrespe o arrugue por el calor 


7.- A seguir bajamos un pelín el fuego, retiramos los pimientos y agregamos la mantequilla y el jalapeño cortado en cubitos al otro lado de la sartén y mediante el asa la inclinamos discretamente hacia afuera para evitar q la mantequilla contacte en exceso en este momento con el salmón y facilitar que el jalapeño se cocine con la mantequilla. De este modo obtendremos la salsa con la que untaremos el salmón




8.- Ya casi estamos lechones! Procedemos a continuación a rociar el pescado con la fusión de la mantequilla y el jalapeño. 
  

9.- Con la ayuda de una cuchara rociamos el pescado con la mantequilla y el jalapeño. Y mantenemos el movimiento rápido y constante de rociado hasta que nuestro salmón esté completamente dorado y bien cocido, y en este punto seguimos entre 45 a 90 segundos más, dependiendo del grosor del salmón. 
10.- Retiramos los filetes de la sartén, dejando en ella la mayor parte posible de la mantequilla y el aceite.
11.- Y listo para servir, solo nos queda adornar con las hierbas picadas y añadir la guarnición.



Notas al pie: Podéis substituir cualquier hierba aromática por otra. Yo usé albahaca, menta y perejil pero con cilantro seguro q también liga y si la mezcla os distrae usad solo una hierba.
Como no encontré jalapeños utilicé bichos (guindillas monstruosamente grandes) Importante, despepitarlas antes de cortarla a cuadrados en la mantequilla

Zarei

 Zarei (座礼significa literalmente “saludar sentado” y es el saludo ceremonial en posición de rodillas. La posición de rodillas más comúnmente usada se denomina Seiza.

 

Seiza implica arrodillarse, estirar los empeines, posar las nalgas sobre los talones y mantener la espalda recta. Para los practicante de cualquier disciplina del Budo es una parte integral y necesaria, común a otras artes japonesas, como la ceremonia del té (Chadō, 茶道), la meditación (Zazen, 坐禅), la caligrafía (Shodō, 書道) o el arreglo floral (Ikebana, 生け花). Seiza (正坐) cuyo significado es "como sentarse correctamente" proviene de la palabra china Jìng zuò (靜坐) “sentado en silencio”. Seiza no es la única posición para estar sentado en el suelo. Podemos distinguir otras más: Kikyo (箕踞) las piernas estiradas, Sonkyo (蹲踞) en cuclillas, Fuza (趺座), con las piernas cruzadas y Kiza (跪坐)con las rodillas dobladas. Podemos calificar Seiza como una variación de Kiza. 

 

Generalmente para hacer seiza primero, bajamos la rodilla izquierda a la altura del talón derecho, procurando que los pies se apoyen sobre la base de los dedos (Jo Sokutei).  Segundo, bajamos la rodilla derecha poniéndola paralela a la izquierda (dedos igual) con una separación de un puño en el caso de los hombres y juntas en el de las mujeres. Tercero, extendemos los pies sobre los empeines (quedando éstos paralelos o en V). Cuarto, bajamos las caderas, posando las nalgas sobre los talones, las palmas de las manos a lo largo de los muslos y los codos naturales y muy próximos al cuerpo. La acción de arrodillarse en Seiza desde una postura de pie se denomina Chakuza (着座). Para levantarnos el proceso se realiza a la inversa:  Primero, elevación de las caderas. Segundo, apoyo de la base de los dedos de ambos pies (Kiza). Tercero, apoyo del pie derecho junto a la rodilla izquierda. Cuarto, elevación del cuerpo y movimiento del pie izquierdo hasta la posición de pie. Nunca sobrepasamos la línea imaginaria que delimitan los dedos de nuestros pies, ni al bajar ni al subir.

 

La forma adecuada del saludo sentado (Zarei o Seizarei 正座礼) dependerá de la situación o de la persona que recibe el saludo. Mientras estemos sentados las manos permanecerán a lo largo de los muslos (jamás sobre las rodillas) o sobre el Hara. El ángulo de la inclinación al saludar, así como la separación de las manos, variará en función de la diferencia de estatus con el interpelado. Las manos deben deslizarse directamente al frente de las rodillas. Si el saludo se realiza con una katana o bokken se denomina Tōrei (刀礼).

 

El hecho de llevar una mano primero o las dos a la vez tiene una explicación marcial, procedente de las épocas donde se combatía con espada (que se portaba en el costado izquierdo). Cuando llevamos primero la mano izquierda, luego la derecha, y recogemos a la inversa es porque se percibe una amenaza o peligro, y se debe de mantener una actitud vigilante (zan shin) en todo momento. El usar la mano derecha como última en avanzar y primera en recoger es para poder usarla para desenvainar la espada. Cuando llevamos las dos manos juntas es porque confiamos plenamente, no percibimos ningún peligro y mostramos nuestro respeto.

 

La posición de las manos en el suelo debe ser con los dedos pulgares e índices tocándose, formando un triángulo entre ellos. Es hacia este triángulo donde llevamos la mirada y la nariz cuando nos inclinamos a saludar. En este momento es importante no llevar el peso sobre las manos, ni elevar las caderas.
